sunday cookin’: yorkshire pudding & mushroom gravy

our little household
although i often scheme and dream about being back “on the road” (which we actually will be doing for a month this summer!), i can’t say enough about how much i love our little home here in south bohemia, a dreamy, slower-paced corner of the country near rivers, farms, and forests. i love our beautiful altbau-style building and flat that was actually built by my landlord’s grandfather in 1913, exactly one hundred years before we moved in. i love our big heavy wooden table, our kitchen full of light. our balcony, which i am dying to spend more time on and really create a special space with more plants than…

sunday cookin’: lentil-tempeh tacos
crunchy tacos. MY FAVORITE. and after some experimenting, i’ve come up with THE PERFECT vegetarian answer to beef-style taco filling: lentil-tempeh tacos. the lentils are filling, versatile, and make me feel good. combine it with tempeh, a soy product similar to tofu but consisting of a “cake” of whole soybeans, which has a fantastic texture that could be similar to a meat substitute. when seasoned just right, you will not know these aren’t from taco time or your similar favorite taco joint with who-knows-what that beef filling is actually made of, plus none of the fat. it’s so healthy and delicious and can be made in simply the time it…
